Traditional Maya Cooking Class at Alma Del Rio on the Comal

An Unforgettable Open‑Fire Cooking Experience

Join us for an authentic, hands‑on Maya cooking experience led by our in‑house chef Dora, created exclusively for Alma Del Rio guests. This immersive class is not a demonstration — it’s a shared experience rooted in tradition, patience, and connection to food.

Set in our open‑air kitchen, you’ll cook entirely over live fire, using a traditionally built fogón and comal, just as it has been done for generations in Maya households.
What You Will Prepare

During the class, you will make a complete traditional meal from scratch:

  • Tamales – prepared step by step, from corn masa to filling, wrapped in banana leaves

  • Traditional chicken soup – slow‑cooked over the fire

  • Handmade corn tortillas – pressed and cooked on the comal

  • Atole – a warm, comforting corn‑based drink served as dessert

Every step is hands‑on, guided, and explained — from ingredients to techniques and cultural meaning.

This is a slow, sensory experience:

Our chef guides the class with warmth and patience, sharing not only recipes, but the why behind each step — the traditions, the rituals, and the respect for ingredients.
